So this is probably one of my (Steph) favourite breakfasts as it’s like holidaying in Tuscany with Nonna plus it’s pretty damn nutritious which keeps me feeling full till lunch.
When picking your breakfast it’s so important to make sure it’s giving you:
1) a source of protein
2) a bit of fibre and
3) a good amount of food (no time for diet portion sizes) .
Here you’ve got multigrain sourdough bread which, thanks to the sour culture, slows down the digestion while the grains work their magic in bulking up your . The ricotta packs a punch of protein and the tomatoes, apart from the deliciousness, gives you more to eat (as it’s low in energy).
So there you have it – a bit of everything you need, prepared in under 5 mins, keeping you satisfied till your next meal.
If you were looking for a recipe for this, it’s as simple as toasting a slice of toast, adding about 1-2 tablespoons of ricotta (currently loving smooth ricotta), fresh tomatoes sliced up, dried oregano and a drizzle of extra virgin olive oil. A little bit of salt and pepper never hurt either.
